Lemon Meringue Pie Cake
This recipe was originally inspired by @saltandbaker 's Key Lime Pie Cake, which is INCREDIBLE! I replaced the key lime with lemon, substituted the pie crust flavors, changed up the frosting, and of course added a frankly unethical amount of toasted Swiss Meringue atop the whole thing. For Pi day I also included EXACTLY 3.14 eyes, by weight.
This cake experiment was truly, incredibly delicious. It was surprisingly easy to make, too, which is always a nice surprise! There are quite a few elements to get together, but if you make the Lemon Cake Pie layers the day before, assembly is fast and fun thanks to the miracle of fire! Thanks, Prometheus!
I'm a recipe developer and cake lab rat at heart. The ideas come fast and wild, though, so it can help to narrow them down in a category like "It's a pie, but it's cake." French silk... banana cream... bourbon pecan... peanut butter silk... now I'm bummed I don't live near a Perkins.
